Bins are being used to catch the condensate. Sanitizing solution not properly prepared. Wiping cloths are not properly stored in sanitizing solution.The door gaskets on the double door sandwich cooler are covered in mold and food debris. The floor of the walk in cooler requires cleaning. Food debris noted under the shelving. Ceiling leak in the main dry storage area. Water being captured in a bucket. Missing one ceiling tile in the storage area, others are completely saturated with water.

• Piccadilly Square, 2488 W. Main St., Cato: Unsatisfatory. Thermometer was not used to evaluate final cook temp of meatballs in sauce prior to placing food onto hot line. Temperature of meatballs in pasta sauce on hot hold line were 110 degrees F. Sauce was approximate 123 degrees F. Manager corrected by reheating meatballs and sauce in microwave and replacing on hot line. Package of raw chicken being thawed in sink that was partially filled with warm water. Chicken was still frozen, as it was reportedly placed into the sink just prior to the start of the inspection. Package of chicken was removed from sink and placed into a bin on the lowest shelf of the double-door cooler.

• Don Juan Cafe Restaurant, 104 Chapman Ave., Auburn: Satisfatory.

• Subway/Auntie Anne's Wal-Mart, 297 Grant Ave., Auburn: Satisfactory. Open bag of frozen bagels on floor in freezer. Handwash sink in the dishwashing area does not drain well, it is very, very slow to the point of almost overflowing on the floor. Couple of cracked floor tiles in front of the register need to be replaced. Floor was two different styles floor tiles meet behind the register have duct tape the width of the floor holding an electrical cord of some kind down. The duct tape is rolling up, tearing and is no longer smooth and easily cleanable and is a tripping hazard for employees.

• Connie's Deli, 137 State St., Auburn: Unsatisfactory. Eggs stored on top shelf of glass front cooler in kitchen. Corrected - manager removed eggs from cooler and placed them on bottom shelf of glass front cooler located behind counter. Final reheating temperature of chicken breast, taco beef, corn chowder and refried beans not measured prior to placing products on hot holding line by counter. Temperature of pieces of seasoned chicken breast in hot holding unit behind the counter measured to be at 125 degrees. Corrected - manger reheated chicken to 165 degrees or greater in microwave and returned product to the hot holding unit. Temperature of ground taco beef in hot holding unit by front counter measured to be 110 degrees. Corrected - manager reheated beef to 158 or greater in microwave and returned to hot holding unit. Temperature of corn chowder and refried beans in hot holding unit by front counter measured to be 116 degrees and 108 degrees (respectively). Corrected - manager completed the reheating process by reheating products in the microwave to greater than 140 degrees and returned products to the hot hold line. Plastic plates and miscellaneous other single-use items stored on shelf in basement had debris on them from the deteriorating foundation wall. Missing faceplate on ice machine in basement. Lid of chest freezer located in the basement is in disrepair. Inoperable sandwich cooler unit located in kitchen. Sides of deep fryer in kitchen have excessive buildup of grease and food debris. Partial box of D-Con observed on storage shelf in basement. Vent grids over cook-line in kitchen have excessive buildup of grease.
