• Dunkin Donuts, 149 Grant Ave., Auburn: unsatisfactory. The small single door cooler unit located under the front counter noted to have an internal temperature of 62.8 degrees F at the time of inspection. Three cans of whipped cream that were stored inside the cooler were noted to be cold held at 52.9 degrees F. The whipped cream was voluntarily discarded at the time of inspection. Two fully cooked eggs being stored in a warmer for use in breakfast sandwiches were not being actively hot held at or above 140 degrees F. The actual temperature of the eggs was 122 degrees F at the time of inspection. The warming tray has a 30-minute timer, which is the maximum hold time as per facility procedure. The timer had expired and the hold time had been surpassed for an undeterminable length of time. The eggs were voluntarily discarded at the time of inspection.

Management will pick up a new thermometer ... before next dinner service. The main preparation cooler in the kitchen was noted to have an internal temperature of 59.4 degrees F. Multiple food items inside the cooler were found to be improperly cold held at above 45 degrees F. Approximately 15 pounds of raw ground beef patties noted at 58.7 degrees F, three coney hot dogs noted at 58.4 degrees F, 10 red hot dogs noted at 58.4 degrees F and nine raw eggs with an internal temperature of 57 degrees F. All previously mentioned food items were voluntarily discarded at the time of inspection. Lack accurate thermometers in each and every cooler unit. Wiping cloths not being properly stored in sanitizing solution. The rinse bay of the three bay sink has an active drain leak. A shallow bin has been placed under the sink to capture the dripping water. The dedicated hand wash sink noted to contain a large bag of dirty towels. The floor under the fryers requires cleaning due to a build up of grease and food debris.
